A Brief History of Raki

Where does raki come from? There are various legends about the origin and history of Raki, and there are also different views about the origin and meaning of the name. Nowadays it is most commonly associated with the Arabic word “araq” which means sweat. This could stand for the distillation of the alcohol.

For a long time, there was also uncertainty about its origin. The question of whether raki is Greek or Turkish could not be answered for a long time. There is now evidence for the Existence of a raki-like drink from the Eastern Roman Empire, dating back to the 5th century. In the Ottoman Empire, it was burned by both the Turkish and Greek populations from the 15th century and then spread to the Mediterranean region. In most encyclopedias, raki is referred to as traditional turkish drink documented.

Today there are many variants of the original. beverages such as Greek ouzo and French pastis. Raki and its variations are still popular all over Europe and are shipped all over the world.

When and how is raki drunk?

Traditionally, raki is drunk as an aperitif and served in oblong glasses. For a pleasantly cool temperature, the glasses can be placed in the freezer before serving. How you want to mix the raki is a matter of personal preference. It can either be drunk pure or diluted with water.

To mix, first put the raki in the glass, then the water, in a mixing ratio of 1:1 or 1:2. The more water you add, the less intense the drink tastes. Finally will be ice cubes poured into the glass and the aperitif can be served.

It is very important when mixing raki that the ice cubes are added last, because the alcohol is sensitive to cold. If you only mix raki with ice cubes and without water, it starts to crystallize and loses its taste. The raki schnapps should therefore never in the freezer

As you mix your drink, you might be wondering why does raki turn white when it comes into contact with water? This whitish cloudiness is caused by the so-called Louche effect. Anise's oils dissolved in alcohol form tiny oil droplets when they come into contact with water. This creates the milky cloudiness and gives the drink its special nickname "lion's milk".

If you don't want to drink the raki before eating, you can enjoy it with meze, the classic Turkish appetizers, for example. It is also ideal with fish or as a digestif. Raki is a real all-rounder.

FAQ – The most common raki questions

Where does raki come from?

There are many descriptions of the origin of the word raki, but today most etymologists agree that it comes from the Arabic word arrak (which translates to "sweet juice" or "sweat"). The name probably comes from the alcohol dripping from the flask during distillation.

Originating in the 8th century in the Arabian region, the aniseed liqueur then spread throughout Europe via Turkey and the Mediterranean. In Greece it is called ouzo, in Italy it is known as sambucca and in France as pastis. Anise is also found in many variations in other countries, for example absinthe, pacharan or herbes de Mallorca contain anise.

See our here Video on this.

The difference between raki and ouzo

When one thinks of raki, the question often arises, what is the difference between Raki and ouzo? And is raki Greek or Turkish?

According to Turkish statutes, raki is defined as a twice-distilled alcohol that is produced in copper stills with a maximum capacity of 5000 liters. It may only be produced from suma (grape mash) and ethyl alcohol of agricultural origin. The end product must contain at least 40% vol. Contain alcohol and be made from at least 65% grape suma. In order to be allowed to call itself raki, the product as well as the ingredients must come from Turkey. In the EU, the term raki is not a protected designation of origin.

Other additives, such as fennel seeds and / or herbs, may be used with ouzo.

See our here Video on this.

Why is raki mixed with water?

Turkish Raki is mixed with water for enjoyment, but can also be drunk pure. Mixing it with water reduces the alcohol content. In this way you can adjust the intensity of the taste and the amount of alcohol to your liking adapt to personal needs. The goal is an optimal interplay with the dishes (meze) and to simply enjoy the community at a Turkish table to the full.

Mixing ratio of raki to water

There are many opinions about the mixing ratio of raki to water. Some drink it pure, some mix it 1:1 or 1:2. We say just give it a try and do it the way you like it best.

See our here Video on this.

Why does raki turn white with water?

Mixing with water creates a whitish cloudiness, the so-called Louche effect, which is essentially due to the oils of the anise, which are dissolved in the alcohol but form tiny droplets of oil when water is added, which then cause the milky cloudiness. In Turkey, raki is also known as "lion's milk" because of its whitish color after mixing with water. The lion metaphor comes from the fact that the raki encourages its drinker.

See our here Video on this.

What is the best raki?

In general, the so-called Gobek Rakis (Göbek=belly) as the highest quality rakis. On these pages we offer you a constantly growing selection of different, also rarer rakis, which you can buy online at reasonable prices. The different varieties of the brands are popular Tekirdag Raki (detailed blog post), Efe Raki and Beylerbeyi Raki, because they usually don't get them in the supermarket. Enjoy it with meze, the classic Turkish appetizers, but also with fish or just as a delicious aperitif. It can also be used as a digestif. Raki works wonders almost everywhere - lion's milk 😉

How does raki taste?

The main ingredient in raki is anise. The drink therefore has a pronounced liquorice aroma. The characteristic aroma can be weakened somewhat by mixing it with water and ice. At the same time, the raki becomes milky and cloudy because the so-called louche effect occurs. In addition to the mixing ratio with water, the selected brand also has a significant influence on the taste from raki. The raw materials used and the production play another role, which is expressed above all in the quality.

What is the alcohol content of Raki?

Turkish raki is usually stronger than ouzo. The alcohol content is at least 40 percent by volume, but is usually between 45 and 47 percent by volume. In Turkey, the drink is also called “Aslan Sütü” or “Lion's Milk”. The name results from the alcohol content as well as from the milky color, which results from the mixture with water.

What is the best way to drink raki?

Traditionally, raki is considered an aperitif and as such is drunk before a meal. Ideally, the alcoholic drink is served in oblong glasses that have been kept in the freezer before drinking. This results in a pleasantly cool temperature, which is supplemented by the correct order when pouring.

The first thing you do is pour the desired amount of the popular aniseed spirit into the glasses. This is followed by dilution with water, which determines the intensity of the taste. Ice cubes follow at the end.
